Smoked Salmon - Sashimi Grade

The product at the heart of our range, king of a celebratory meal and simple enough to eat every day. We take premium, high welfare salmon from cool Scottish waters and hand craft every element of its production from curing in our own blend of juniper salt through to its slow cold smoking, gently over beech, oak and heather. Lean, high in protein and omega 3’s.  

Tasting Note

A roundness in smoke character that sees the salmon come cleanly to the fore. Firm texture, rich in colour, unsalty, moreish. Sliced thicker for a more satisfying flavour profile in the mouth. Elegant and unadulterated.

Try it with

Serve traditionally on good bread with crème fraîche and the tiniest hint of horseradish or dill. Stands up equally as a partner to aperitivo or a luxurious sandwich. Pairs excellently with a steely Chablis or better still, a dry Kent white.

Smoked Duck No.8

Best quality barbary duck breasts cured slowly in a juniper and orange brine before being hot-smoked over beech and apple woods. Recipe No. 8 is based on a blend of our own juniper-infused salt and was Supreme Winner at the 2016 Crystal Palace taste challenge.

Tasting Note

Versatile, velvety, extremely well rounded flavour. Smokey aroma with a lasting umami finish. Presented medium rare.

Try it with

We present this rare giving you the flexibility to eat it as it is or cook it further to your liking. It goes fantastically with an orange, pomegranate and watercress salad. Robust enough to serve as a main with French fries, salad and a good dollop of dijon mustard and mayonnaise. We love serving this with a bottle of beer from our local brewery. It also goes well with a punchy pinot noir.

Smoked Chicken

Corn-fed top quality breasts, plump juicy and packed full of flavour. Cured with salt, pepper, orange and bay. Hot-smoked over beach and apple woods.  

Tasting Note

Almost sweet in character, this breast provides the perfect balance between saltiness, smokiness, and chicken-iness. Watch as the flavour finishes on mild pepper and leaves the pallete fresh. Firm to the touch, deep appetising colour.

Try it with

Mild enough to fill a sandwich or wrap, this chicken also goes fantastically in a risotto or pasta dish.

Smoked Venison Pave

One of those products you dream about. Sourced from accredited estates and taken from the haunch, the pave is one of the finest game cuts available and an easy contender to the best beef fillet steak on both flavour and texture. Wet cured with juniper, citrus peel, white pepper and bay,  and the hot-smoked over beech and oak. Venison is naturally lean and rich in a wide range of vitamins and minerals.  

Tasting Note

Naturally sweet and rich with perfectly balanced smoke flavour. Extremely succulent and moreish. Very mild game, closer to beef. Presented rare.

Try it with

Serve the Pave warmed with chunky chips, béarnaise sauce and a tomato salad. Excellent for a show-off dinner. Partner with Syrah or, for the more confident, a rich Primitivo.

Twice Smoked Mature Cheddar

Aged for at least 21 months, this cheese has been selected for its distinctive ‘bitey’ texture and strong, rich creamy character. Smoked for 6 hours before being racked for a week and then smoked for a further 6 hours before a final 1 month maturation to allow the smokiness to penetrate the depths of the cheese and provide a full and rounded flavour across every slice.

Tasting Note

Naturally sweet and rich with perfectly balanced smoke flavour.

Try it with

Excellent as a cheese board addition or as part of a simple ploughmans. Makes for a lovely and different cheese sauce or gratin, or a cheese and pickle sandwich for the purest.

Smoked Cashew-nut Butter

 

Quality cashew nuts smoked over beech and oak and then blended smooth to create an unusual and moreish alternative to nut butter. Nutrient rich and high in protein this butter is also loaded with vitamins, essential amino acids, phosphorous, iron and magnesium. Vegan. No added sugar.

Tasting Note

Smooth on the tongue with a subtle smokiness coming to the fore. Dominant flavour of cashew with their natural sweetness.

Try it with

Serve on sourdough toast with smoked butter and nice cup of tea. Can be added to chocolate brownie recipes to pimp and we are told it also makes a great tasting alternative for dripping to create extra special vegan roasties.
