Matured 200ft below ground, this cheese has been selected for its robust and rounded flavour, distinctive ‘bitey’ texture and strong, rich creamy character. Smoked twice over a period totalling 24 hours before being matured for a further month to allow the smokiness to penetrate the depths of the cheese and provide a full and rounded flavour across every block.
