Best quality Barbary duck breasts cured slowly in a juniper and orange brine before being hot-smoked over beech and apple woods. Our breasts are presented rare and yet show a caramelised and full flavoured skin. Recipe No. 8 is based on a blend of our own juniper-infused salt and was Supreme Winner at the 2016 and 2017 Crystal Palace taste challenges.

Typical pack size 205g. 

Try it…

…with orange, pomegranate and watercress salad as a little starter. Alternatively, as a main with lentils, green beans and herbs. Very elegant.
