Fancy a piece of the action? Come and roll your sleeves up and get involved in one of our hands-on workshops at our popular Smoke School in Streatham. We run three workshops covering a breadth of smoking and curing techniques.

We always keep our class sizes small and maintain a heavy focus on the ‘doing’ side of learning. You’ll be taught directly by one of our expert team, drawing on our years of experience built up in the smokery.

Whether you’re a dabbler, a hobbyist, a gift recipient or looking to start you own business, our intimate courses will be sure to set you on the right path.

Salami Sessions Workshop

Interested in the new wave of British charcuterie? Find yourself at work dreaming of air-dried sausage? Then this course is definitely for you.

Whether you’re a beginner of a professional, we’ll take you through the many steps needed to make your own fermented and air-dried, large-format salami.

From pork to butchery, mincing, filling, fermenting and drying, this in-depth course will make you a true salami master.

Throughout the session there’ll be ample tea and we’ll finish off with one of our famous bacon sandwiches to fill your belly.

You'll walk away with all of the skills needed to make your own salami and once it has dried, your own 1kg Salami (worth £40) will be posted to you.

Smoke, Cure and Cook Workshop

This is a workshop for the lover of possibly the world’s best sandwich. That’s right: the Salt Beef Reuben.

In this session we'll provide you with an introduction to the techniques and processes involved with smoking and curing, learning about how to apply salt and smoke to products to gently enhance their flavour. Over the course of the session we will then prepare, cook and eat:

  • Hot-smoked Camembert with pine nut, garlic and rosemary

  • The salt beef Reuben sandwich with fresh pickles, dressings and blow torch cheese.

At the end of the lesson you'll walk away with a new appreciation of the processes involved in traditional smoking and curing, a slab of your own cured salt beef, a pot of fresh pickles and a belly full of delicious food that you will have prepared and cooked yourself.

Makin’ Bacon Workshop

A fun and informative session learning techniques and approaches to basic bacon making.

During this workshop we’ll cover everything you need to know to make your own great bacon, bursting with flavour.

You will learn it all: from the best pork to use and the correct butchery techniques, right through to the curing, drying and, of course, the eating.

Throughout the session there’ll be ample tea and lashings of bacon sandwiches to keep the wolf from the door.

You'll walk away with all the skills needed to make your own bacon at home, a good chunk of bacon that you'll have cured on the day, and a full belly.

Smoke School Workshop Series

These workshops will show you three different approaches to producing cured meats and will give you the knowledge you need to be able to make exceptional quality produce in your own home.

During the Makin’ Bacon workshop you will learn about the cuts used to make streaky and back bacon and how to butcher, cure and dry them. You will take home a couple of big chunks of bacon to dry in your fridge, along with the spare ribs and a belly full of bacon sandwiches.

In the Smoke, Cure and Cook workshop we'll provide you with an introduction to how to apply salt and smoke to products to gently enhance their flavour. Over the course of the session we will then prepare, cook and eat hot-smoked Camembert and the legendary salt beef Reuben sandwich. At the end of the lesson you'll walk away with a slab of your own cured salt beef, a pot of fresh pickles and a belly full of delicious food.

At the Salami Sessions workshop we’ll take you through the many steps needed to make your own fermented and air-dried, large-format salami. From pork to butchery, mincing, filling, fermenting and drying, this in-depth course will make you a true salami master. Once it has dried in our cure chamber we’ll send you a 1kg salami made with your own fair hands.
